Lettuce


Herb and nut salad wraps
(From Kathy coleman, CSA member and fellow farmer and fiber expert)

Ingredients:

12 small to medium size leaves Boston or Bib lettuce

2 Roma tomatoes, diced

1 cup sprouts

Filling:

1 cup blanched almonds

1 cup blanched cashews

1 large garlic clove, crushed

¼ finely chopped celery

2 tbsp minced green onion

2 tbsp finely chopped fresh sage

2 tbsp finely chopped basil

2 tbsp  bsp  chopped fresh dill

2 tbsp nutritional yeast

2 tbsp Bragg Liquid Aminos

1 tbsp all-natural poultry seasoning

¼ ground cayenne pepper

Prepare filling in food processor, process almonds & cashews until finely ground.   (I add the rest of stuff that needs to be finely chopped as well).  Transfer to a bowl. 

To bowl add remaining filling ingredients and mix well.   In each lettuce leaf place about 2 tbsp filling and top w/tomatoes and sprouts.
